This morning, Chelsea and I lifted shoulders and back. The one thing on my mind when I got home: cake. What kind of cake? Blueberry protein cake. Why? Because blueberries are beautiful, in season, and my favorite fruit E-V-E-R.
Blueberry protein cake recipe:
1/4 cup quinoa flour
1 handful blueberries
1 egg white
1/2 tsp baking powder
1 TBSP unsweetened almond milk
Blend the above together and microwave for 2 minutes.
Top with blueberry protein "frosting" aka blueberry protein powder with a little bit of water and more blueberries.
On the way back from a client meeting in downtown Toledo, I went a different route back to the office and came across this very large frog sculpture. Definitely put a huge smile on my face.
